BEST SUGAR COOKIES
The following is the recipe and notes for the “animal” (wolfhounds and goats) sugar cookies used by Barb 1 C butter (no substitutes) softened 1 pkg (3 oz) softened cream cheese 1 C sugar 1 egg yolk 1/2 t vanilla 1/2 t grated lemon rind (optional) or 1/2 t almond extract (optional also) 2 1/4 C flour 1/2 t salt 1/4 t baking powder Mix cream cheese, butter and sugar. Beat in yolk and extracts. Whisk together flour, salt and baking powder then gradually add to creamed mixture. Cover and refrigerate for at least 4 hours (see note below). On floured board (I used parchment paper and didn't need any flour) roll out to 1/4 inch thick for shapes. Cut with cutter. Bake 350 on parchment or Silpat lined sheet until edges brown. About 12 -15 minutes. Cool on pan and remove to rack. Was impossible to pick up hot without losing legs (see note below).
NOTE: I chilled overnight. Rolled on parchment with no extra flour needed and they were great. Cut out goats … this didn't spread at all - shapes held true at that thickness. Real recipe called for 1/8 inch but I was afraid the legs and tail would fall off. We got about 20 goats that were 4 inches long and about 2 dozen 3 inch (like the Nigies) out of this amount of dough.
